Also Known As Boneless Strip 0x1. A steakhouse classic and one of the most popular beef cuts, the Striploin Steak, also known as a New York Strip Steak, is tender, juicy, and full of rich flavor. All beef performs better when properly aged with 21 days as the minimum recommendation for the best eating experience. Wet aging is the most common method: storing meat in sealed, airtight bags under refrigeration (32°F to 34°F).
